Cherry Chia Jam Protein Overnight Oats

  • ½ cup (55g) UNCLE TOBYS OATS Protein Oats with Pepita & Chia
  • ⅓ cup (80mL) milk
  • 2 tbsp plain yoghurt
  • ½ cup (75g) strawberries  
  • ¼ cup (30g) chopped nuts  
  • Mint leaves, to garnish  
  • Cherry Chia Jam
  • 1 cup (150g) fresh or frozen cherries, pitted and chopped
  • 1 tsp honey or maple syrup (adjust to taste)
  • 1 tbsp chia seeds
  • ½ tsp vanilla extract (optional)

  1. In a medium bowl, combine oats, milk, yoghurt; mix well; cover and refrigerate mixture 4 hours or overnight.  
  2. Make Cherry Chia Jam.  
  3. To serve, spoon one-third of the oat mixture evenly in a portable jar. Top with half the chia cherry jam mixture. Continue layering with remaining oat mixture and chia cherry jam mixture.
  4. Top with strawberries, nuts, fresh mint.

Cherry Chia Jam: In a small saucepan, combine cherries and honey over medium heat. Cook until cherries soften and release juices, about 5-7 minutes. Remove from heat, stir in chia seeds and vanilla extract, stand and cool to room temperature. Transfer jam to an air-tight container and refrigerate until needed.
