Banana and Vanilla Protein Pancakes

Ingredients

  • 1 (200g) ripe medium banana
  • 2 (92g) UNCLE TOBYS OATS Quick Sachets Big Bowl Protein Vanilla Flavour
  • 1 egg
  • 1/4 cup (60mL) milk, approximately  
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • Olive oil spray for cooking

Method

  1. Place banana, UNCLE TOBYS OATS Quick Sachets Big Bowl Protein Vanilla Flavour, eggs, milk, baking powder, and vanilla in a blender and blend the ingredients until you have a smooth pancake batter. If the batter is too thick, you can add a bit more milk and blend again until you reach your desired consistency.
  2. Heat a frying pan over medium heat. Add a small amount of oil and pour ¼ cup (60mL) into pan. Cook until the edges start to look set, about 2-3 minutes. Flip the pancakes gently using a spatula and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through. Cook in batches if necessary.  
  3. Top pancakes with desired topping and serve immediately
