Smooth and crunchy come together with a fruit flourish
1 cup frozen strawberries
1 small banana
120g (2 handfuls) spinach
1 tbsp chia seeds
1 cup low fat milk
200g strawberries, quartered
1 ½ cups Uncle Tobys PLUS Antioxidants cereal
½ cup (30g) walnuts, roughly chopped
¼ cup (20g) dried cranberries, roughly chopped
To make the smoothie, add the strawberries, avocado, banana, spinach, chia seeds and milk to a blender and blitz until smooth.
In a small bowl, add the strawberries and the passionfruit. Stir to combine.
In a dry pan on a medium to high heat, toast the walnuts for 2-3 minutes. Remove from the pan and allow to cool briefly.
To assemble the dish, split the smoothie mixture evenly between two bowls and garnish one side of each bowl with the strawberries and passionfruit, breakfast cereal, cranberries and walnuts. Serve immediately.
