Gooey Caramel Baked Oats

Ingredients (Vegan, Dairy Free, Refined Sugar Free)

Baked Oats Base:

  • 1/2 cup Uncle Toby’s traditional oats
  • 1/4 cup oat milk
  • 1/4 cup apple puree
  • 1/2 tsp baking soda
  • 1/2 tsp maple syrup
  • 1/2 tsp maca powder (optional)

Caramel Inside:

  • 1 tbsp cashew butter
  • 1 tbsp maple syrup
  • 1/2 tbsp water
  • 1/4 tsp vanilla bean extract
  • Pinch sea salt

METHOD

  1. Method: Preheat oven to 180ºC
  2. Add all the baked oats ingredients into a blender and blend until combined In a dish add all the salted caramel ingredients together and microwave for 1 minute, stir half way and mix together once finished In a heatproof dish pour most of the baked oats mixture in
  3. Spoon 3/4 of the salted caramel into the centre
  4. Pour the rest of the baked oats batter on top so it covers the caramel
  5. Add about a tsp of warm water to the remaining caramel dish and stir until mixture thins
  6. Drizzle caramel on top of mixture Bake in the oven for 25 - 30 minutes or until a skewer comes out clean
  7. Carefully remove from the oven and enjoy!
