Oats – Savoury Turmeric Porridge with Poached Egg

INGREDIENTS

  • 1 Cup UNCLE TOBYS Oats
  • 1 Cup Coconut Water
  • 1 Cup Water
  • Teaspoon Turmeric
  • Teaspoon Moroccan Spice
  • Pinch sugar
  • Pinch Sea Salt
  • Quarter Lime – squeezed

To Garnish

  • 1 Egg
  • 1 Teaspoon Dukkah
  • 1 Teaspoon Pomegranate seeds
  • Tablespoon of crispy chickpeas – store bough
  • Red kale
  • Sesame seeds

METHOD

For porridge

  • Combine all ingredients in a saucepan and slow cook for 6 – 8 minutes, or until thickened.

For Garnish

  • Bring water to the boil in a saucepan, poach egg for 1-2 minutes and drain on kitchen roll
  • Bring water to the boil in a saucepan, blanch kale in boiling water for 30-40 seconds, drain and sprinkle with sesame seeds

Spoon porridge into a warm bowl, sprinkle pomegranate seeds, chickpeas and dukkah. Add kale and top with a poached egg.
