Pina Colada Oats

Preparation Time: 5 minutes (plus soaking time)

½ cup UNCLE TOBYS Bircher Muesli
½ cup (125mL) coconut water
1 ripe coconut, split in half
½ cup coconut yoghurt, skim or reduced fat
4 pieces dried pineapple, sliced
2 tbsp roasted coconut chips
Mint, for garnish


1. In a medium bowl combine UNCLE TOBYS Bircher Muesli and coconut water. Refrigerate overnight.

2. Evenly divide soaked oats in coconut halves, top with coconut yoghurt, pineapple and coconut chips. Garnish with mint.
