Uncle Tobys Plus Raw Pecan & Pistachio Slice

A delicious brekkie twist

INGREDIENTS

150g pecans

2 cups (100g) Uncle Tobys Plus 

300g Medjool dates, pitted

3 tablespoons cacao powder

¼ green apple, grated

40g raw pistachios, finely chopped

METHOD

Lightly oil and line a 18cm x 18cm cake pan with baking paper.

Blend pecans in food processor until crumbly. Add Uncle Tobys Plus cereal, dates, cacao and green apple. Blend until smooth.

Press mixture into prepared pan and flatten the surface. Sprinkle with pistachios and gently press in.

Place in freezer for 1 hour then cut into 16 even squares. Store in the fridge for up to 5 days.
