Crunchy Oat Cinnamon Muffins

  • ½ cup (125g) margarine
  • ¾ cup (165g) brown sugar
  • 2 cups (300g) plain flour
  • 1½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 2 tsp cinnamon
  • 375ml can Light & Creamy Cooking Milk
  • 1 egg
  • ½ cup (45g) UNCLE TOBYS Traditional Oats
  • 1 tsp cinnamon, extra


  • Preheat oven to 180°c/160°c fan forced.
  • Grease a 12 hole (1/3 cup/80ml) muffin pan.
  • Beat margarine and sugar until light and creamy. Remove cup of the mixture and reserve for topping. To remaining mixture, add sifted flour, baking powder, bicarbonate of soda and cinnamon.
  • Combine Light & Creamy cooking milk and egg; mix into the dry ingredients until combined. Spoon mixture into prepared muffin pan.
  • Add UNCLE TOBYS Traditional Oats and extra cinnamon to reserved topping, mix well. Sprinkle mixture evenly over muffins, using the back of a spoon to gently press topping into the muffins.
  • Bake for 15-20 minutes or until well risen and golden brown.
