CONGEE WITH A TWIST

INGREDIENTS

  • 1 medium egg
  • 1/3 cup Chicken stock (Salt reduced)
  • 2 tsp Soy sauce (salt reduced)
  • 2 cups (500mLs) of water
  • 10g Ginger, sliced
  • 1 clove Garlic, peeled and sliced
  • ½ brown onion (150g) peeled and sliced
  • 2 shallots (10g) thinly sliced
  • ½ cup (35g) Enoki mushrooms
  • ½ cup (35g) Shitake mushrooms
  • ½ cup (35g) white button mushrooms
  • ½ cup UNCLE TOBYS quick oats
  • ½ tsp of Chinese five spice

METHOD

  1. Place water in a pot, bring to the boil, add egg and boil for 6 minutes. Peel and set aside
  2. In a pot heat stock, soy and water in a pot with the chopped ginger, garlic and onion. Bring to boil and simmer for 3 minutes
  3. Strain stock, add chopped mushrooms and gently cook for 1 minute
  4. Add UNCLE TOBYS quick oats and the Chinese five spice, cook for 3-4 minutes
  5. Fold in shallots and top with the cooked egg, garnish with some of the shallots and the Enoki mushrooms

Tip: Add a little warm water and stock to adjust to desired consistency
