OATY BANANA BREAD
Cooking time: 45 minutes
Makes: 10 slices (122 grams per slice)
1¼ cup (185g) plain flour
½ cup (110g) brown sugar
½ tsp bi carbonate of soda
¼ tsp baking powder
1 tsp cinnamon
1 cup (90g) UNCLE TOBYS Traditional Cooking Oats, plus ¼ cup (20g), extra
3 (690g) large ripe bananas
3 tsp canola oil
1 egg, beaten
2 egg whites
- Preheat oven to 180°C/160°C fan forced. Grease and line a 23 x 12 cm loaf pan with baking paper.
- In a large bowl, combine flour, sugar, bi carbonate of soda, baking powder and cinnamon. Stir through UNCLE TOBYS Traditional Cooking Oats.
- In a medium bowl, mash bananas with a potato masher or fork. Add oil, whole egg and egg whites; mix thoroughly.
- Pour batter into pan and top with extra UNCLE TOBYS Traditional Cooking Oats bake for 45 minutes or until cooked through. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice loaf into 10 equally sized slices.
